Shaved Beet Salad with Citrus Dressing

Earthy beets, spicy radish microgreens, and a bright citrus dressing combine on a bed of butter lettuce for a satisfying and filling salad.

For the dressing:
2 Tbs. olive oil
1 Tbs. white wine vinegar
1 navel orange, zested and juiced
1 tsp. honey
Pinch of cayenne pepper
Salt and pepper, to taste

  1.  In a mason jar (with a fitting lid), combine all ingredients and shake until well blended.

For the salad:
1 head butter lettuce, leaves torn
1 red beet, peeled and sliced very thin
1 golden beet, peeled and sliced very thin
2 oz. crumbled goat cheese
2 Tbs. chopped pistachios
1 container Ernessi Farms Radish Microgreens

  1.  Arrange ingredients on large plate and drizzle with salad dressing, serve immediately.
