Earthy beets, spicy radish microgreens, and a bright citrus dressing combine on a bed of butter lettuce for a satisfying and filling salad.
For the dressing:
- 2 Tbs. olive oil
- 1 Tbs. white wine vinegar
- 1 navel orange, zested and juiced
- 1 tsp. honey
- Pinch of cayenne pepper
- Salt and pepper, to taste
- In a mason jar (with a fitting lid), combine all ingredients and shake until well blended.
For the salad:
- 1 head butter lettuce, leaves torn
- 1 red beet, peeled and sliced very thin
- 1 golden beet, peeled and sliced very thin
- 2 oz. crumbled goat cheese
- 2 Tbs. chopped pistachios
- 1 container Ernessi Farms Radish Microgreens
- Arrange ingredients on large plate and drizzle with salad dressing, serve immediately.
