Earthy beets, spicy radish microgreens, and a bright citrus dressing combine on a bed of butter lettuce for a satisfying and filling salad.

For the dressing:

  • 2 Tbs. olive oil
  • 1 Tbs. white wine vinegar
  • 1 navel orange, zested and juiced
  • 1 tsp. honey
  • Pinch of cayenne pepper
  • Salt and pepper, to taste
  1.  In a mason jar (with a fitting lid), combine all ingredients and shake until well blended.

For the salad:

  • 1 head butter lettuce, leaves torn
  • 1 red beet, peeled and sliced very thin
  • 1 golden beet, peeled and sliced very thin
  • 2 oz. crumbled goat cheese
  • 2 Tbs. chopped pistachios
  • 1 container Ernessi Farms Radish Microgreens
  1.  Arrange ingredients on large plate and drizzle with salad dressing, serve immediately.
