A blueberry simple syrup, basil-sugared rim, & healthy dose of tequila make for a dangerously drinkable treat to cool off in summer’s heat.
For the blueberry simple syrup:
- 1 cup water
- 1 cup sugar
- 1 cup blueberries
- In a saucepot, bring all ingredients to boil over medium heat. Reduce heat to low and allow to simmer for five minutes (or until blueberries have burst and syrup is a deep purple color).
- Remove from heat and pour into a mason jar or other heatproof container to cool until ready to use.
For the basil sugar:
- 2 leaves Ernessi Farms basil
- 3 Tbsp. granulated sugar
- In a food processor pulse the basil leaves and sugar until combined. Spread onto plate until ready to use.
For the margarita:
- 2 leaves Ernessi Farms basil
- Handful of fresh blueberries
- ½ cup blueberry simple syrup
- Juice of 2 limes
- 1 – 2 oz. tequila of choice
- Extra basil leaves and fresh blueberries
- Rub the top of a serving glass with a lime wedge and rim with basil sugar.
- Muddle the basil leaves and fresh blueberries. Pour blueberry simple syrup, lime juice, and tequila over top, stirring to combine. Top with ice and serve immediately.
